Apple-filled Butternut Squash

Preheat oven to 350 degrees

Butternut squash
1 cube (or 1/2 cup) butter
diced onion (to taste)
1 apple, peeled and chopped
1/2 tsp. salt
1/4 tsp. ginger
1/4 tsp. cinnamon
2 tbsp. brown sugar
2 tbsp. apple juice


Cut butternut squash lengthwise in half, remove seeds. Place facedown in one inch of water. Cook for 1/2 hour to 45 minutes.
While squash is cooking, stir all remaining ingredients together in saucepan until apple is cooked.
Scoop apple mixture into the hollow part of each squash where the seeds were removed. Put remaining mixture into little bowls and serve as garnish.
