Con Queso Rice


*note* this is a dish my mom made when I was growing up. I love this one!!!



Pre-heat oven to 350 degrees

3/4 lb. shredded jack cheese
diced green chilis (to taste)
1 1/2 c. cooked rice
1/2 lb. ricotta cheese (thinned a bit with milk)
3 cloves of garlic (I use garlic salt...quicker!)
1/2 c. grated cheddar cheese
minced onion (to taste)
1 can black-eye peas

Mix together the jack cheese and ricotta cheese. Then mix together everything else.(EXCEPT FOR THE CHEDDAR CHEESE!!) In the bottom of a baking pan, spread half of the rice mixture, then spread half of the jack/ricotta mixture on top. Repeat. Bake for 20 minutes, then remove from the oven and add the shredded cheddar cheese on top. Bake 5 more minutes...done!!!
