Lasagna Toss
(*this recipe was hand-written for me (along with many others) by my sister Julie on Christmas Day, 1997)
Preheat oven to 350 degrees
1 lb. ground beef
1/2 c. chopped onion
Dash minced garlic
1/2 tsp. salt
1 3/4 c. spaghetti sauce
6 oz. spiral noodles, cooked and drained
1 c. cottage cheese
2 c. (8 oz.) shredded mozzarella cheese, divided
grated parmesan cheese
Brown beef with onion, garlic and salt; drain. Stir in spaghetti sauce; simmer until heated. Remove 1 cup meat suace; set aside. Stir noodles into remaining sauce. Place 1/2 of noodle mixture in a greased 2qt. casserole dish. Cover with cottage cheese and 1 cup mozzarella cheese. Add remaining noodle mixture; top with reserved meat sauce and remaining mozzarella cheese. Sprinkle with parmesan cheese. Bake, coverered for 20-25 minutes. Let stand 5 minutes before serving.
