Directions
Mix these ingredients until well blended.
Fold in 1 cup Cool Whip and pour into
chocolate cookie pie crust.
Top with remaining Cool Whip.
Put Richardson's fudge sauce into a baggie and
snip corner. Pipe on top in stripes going one
direction then the other.
Chill for 2 hours and serve
OATMEAL BANANA NUT COOKIES
1 (18.25oz) yellow cake mix (pudding in the mix)
1/2 cup (1 stick) butter, softened
1/4 cup butter flavor Crisco
1/2 cup brown sugar, packed
2 eggs
1 tablespoon vanilla
1 cup mashed bananas
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1-3/4 cups uncooked oats
1 cup pecans, chopped
1/2 cup raisins
Directions
Heat oven 400º Line cookie sheets with parchment paper.
In a large bowl beat together butter, Crisco and brown sugar;
add eggs, vanilla, bananas cinnamon and nutmeg and mix about
1 minute. Add cake mix and oats beating on low speed until well
combined, scraping down the bowl when needed. Fold in nuts and
raisins. I used a 1-inch cookie scoop and drop about 2-inches
apart on prepared cookie baking pan. Bake about 10 to 12 minutes
until lightly browned. Cool on pan for one minute and then remove
to wire racks to cool completely.
Snickerdoodles
1 1/2 cup plus 2 Tbsp. sugar (divided)
1 cup butter or margarine (softened)
2 eggs
2 3/4 cups flour
2 tsp. cream of tartar
1 tsp. baking soda
1/2 tsp.ground nutmeg
1/2 tsp. salt
2 Tbsp. ground cinnamon
84 pecan halves
Makes 7 dozen cookies.
Directions
In a large mixing bowl combine 1 1/2 c. of sugar,
the butter and eggs. Beat at medium speed until
light and fluffy. Add flour, tartar, soda, nutmeg
and salt. Beat at low speed until a soft dough forms.
Cover with plstic wrap and chill for 1-2 hours, or until
firm. Heat oven to 375 degrees. In small bowl combine
cinnamon and 2 Tbsp. sugar. Shape dough into 1" balls, roll
in cinnamon, mix and place on ungreased cookie sheets 2" apart.
Press pecan half into center of each ball. Bake 10-12 minutes
or until light golden brown. Cool completely before storing.
Yummy Oatmeal

Ingredients
1 cup soft margarine
1 cup sugar
1 cup brown sugar
2 eggs
2 cups all-purpose flour
1½ teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon salt
3 cups quick-
cooking oats
1 teaspoon vanilla
Directions
Preheat oven to 375 degrees. Stir margarine and all sugars
until smooth; beat in eggs and vanilla. Combine flour, cinnamon,
baking soda and salt; blend thoroughly. Beat into sugar mixture.
Stir in oatmeal. Drop by round teaspoons onto a greased
baking sheet. Bake for 12-14 minutes. Makes 6 dozen.
Forgotten Cookies
Ingredients
1 teaspoon vinegar
3 egg whites
pinch of salt
1 cup sugar
Directions
Preheat oven to 300 degrees. Combine all ingredients in a
mixing bowl and beat on high for 12-15 minutes until stiff
peaks form. Drop by teaspoons onto wax paper covered cookie
sheet. Put in oven and turn OFF. Let sit overnight and you will
have some delicious cookies waiting for you when you wake
up the next morning
Chocolate Chunk Cookies
Ingredients
2¼ cups flour
1 teaspoon salt
1 teaspoon baking soda
¾ cups firmly packed brown sugar
¾ cups granulated sugar
1 cup soft margarine
1 teaspoon vanilla extract
2 eggs
1 package (10 oz.) milk chocolate chunks
1 cup chopped
nuts (optional)
Directions
Preheat oven to 375 degrees. Combine flour, salt and baking
soda in a bowl and set aside. Combine brown sugar, sugar, butter
and vanilla and beat until creamy. Add eggs and mix all together.
Gradually stir in dry ingredients, mixing well. Fold in
chocolate chunks (and nuts). Drop mixture by rounded teaspoons
onto ungreased cookie sheets. Bake 8-10 minutes. Makes 4 dozen.
